• Crust
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup oatmeal
  • 1/2 cup softened butter
  • Filling
  • 2 cups canned pumpkin
  • 13 1/2 ounces evaporated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 2 eggs, beaten
  • 3/4 cup white sugar
  • Topping
  • 2 tablespoons melted butter
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1 Mix together the crust ingredients and press in a lightly greased 9″x13″pan. Bake for 15 minutes in 350 degree oven.
  • 2 In a large bowl, combine the filling ingredients, and beat well with a mixer.
  • 3 Pour onto hot crust and bake for 20 more minutes.
  • 4 Stir together the topping ingredients, and sprinkle on top of filling.
  • 5 Bake for 20 more minutes.
  • 6 Let cool, and cut into squares. Serve with whipped cream.
