• 250g butter
  • 1/2 cup brown sugar
  • 395g can sweetened condensed milk
  • 1 egg
  • 2 cups plain flour, sifted
  • 1/2 cup wholemeal self-raising flour, sifted
  • 150g FreshLife diced dried apricots
  • Preheat oven to 170°C. Line 2 large baking trays with baking paper.
  • Using an electric mixer, beat butter and sugar until creamy. Add condensed milk. Beat until smooth. Add egg and beat to combine.
  • Transfer mixture to a large bowl. Add flours and apricots. Stir until mixture is just combined. Shape heaped tablespoons of mixture into 25 balls. Place on prepared trays, allowing 3cm for spreading. Flatten balls slightly with fingertips. Bake biscuits, in batches, for 20 minutes or until pale golden. Remove from oven. Allow to cool on trays.
